Pulihora - Tamarind Rice

Pulihora or Pulihara which ever way it is spelled, is right.\\nAlso known as Puliyodhara(puliyodharai), Puliyogare or Chitrannam, is a very common rice dish in Andhra Pradesh, Tamil Nadu and Karnataka States. I am sure everyone knows about this rice dish, so lets get to the preparation. If you have no idea what it is, the picture shows everything.\\n

\\nIngredients: \\n
    \\n
  • 500 gm rice
  • \\n

  • 1 tbsp roasted peanuts
  • \\n

  • 5-6 roasted cashew nuts
  • \\n

  • a pinch of asafoetida
  • \\n

  • a pinch of fenugreek powder
  • \\n

\\nIngredients for tamarind paste: \\n

    \\n
  • 500 gm tamarind
  • \\n

  • 2-3 red chillies
  • \\n

  • 1/4 tsp turmeric powder
  • \\n

  • salt to taste
  • \\n

\\n

\\nIngredients for Tempering: \\n
    \\n
  • 2 tsp oil
  • \\n

  • 1/4 tsp mustard seeds
  • \\n

  • 1/2 tsp urad dal
  • \\n

  • 1/2 tsp bengal gram
  • \\n

  • 5-6 curry leaves
  • \\n

  • 2-3 curd chillies (optional)
  • \\n

  • 2 green chillies
  • \\n

\\nMethod: \\n

    \\n
  1. Wash and soak rice for 15-20 min and cook the rice.
  2. \\n

  3. Prepare tamarind juice by soaking the tamarind in 2 cups of water.
  4. \\n

  5. Boil the tamarind juice along with the turmeric powder, red chillies and salt till the consistency becomes a thick paste.
  6. \\n

  7. Heat oil in a pan.
  8. \\n

  9. Add mustard seeds, urad dal, bengal gram, curry leaves, curd chillies & 2 green chillies.
  10. \\n

  11. Add the above seasoning, roasted cashew nuts, roasted peanuts, asafoetida and fenugreek powder to the cooked rice and mix well.
  12. \\n

  13. Server with potato wafers for extra taste.
  14. \\n

\\nThe Tamarind paste in the above procedure can be stored for days together and used as a ready-mix later. So, don\\\’t mind if you think you have more paste than you actually need.     gms of rice? does that make sense to anyone let me know….
